Pulse until it’s emulsified then it’s time to cook your pasta in salty water. Decant that silky smooth sauce into a pan on low heat. Add salt and pepper to taste, as well as some oregano and chilli flakes. Fresh basil is going to elevate this sauce into the stratosphere Loosen it up with pasta water and then throw in a load of parmesan. Then you’re ready to introduce the pasta. Mix it up until the sauce sticks to the pasta like glue and I man nah play number 2. Then you’re ready to serve. Some recipes are a pain in the arse with loads of prep but this one is actually fun. It makes 2 big portions for two hungry people. And whoever you’re cooking this for will be incredibly grateful to have you in their life. Despite it all being me.
